Try the seared diver caught scallops with smoked white onion, Alsace bacon and foraged sorrel; Anjou squab pigeon with baby beetroot, white asparagus, seared foie gras and beetroot dressing or red mullet with Sicilian tomatoes, creamy avocado purée and fennel.
